Squeezing summer produce with this zucchini egg sheet pan bake tacos. Perfect for easy lunches or even for entertaining. I use @vitalfarms eggs, because of their ethical way to farm and the egg yolks are beautifully orange.

What you need

hot sauce

avocado

feta

pastry crust

pepper

salt
extra-virgin olive oil

russet potato

zucchini
Instructions
In a sheet pan, add thinly sliced potatoes, zucchini , drizzle olive oil, salt & pepper it. Bake at 425 for 10 minutes. Take it out and break open the eggs. Bake it again at 400 until the desired yolk consistency. Top with hot sauce, avocado, cheese and serve with warm tortillas.
