Veggie Egg Bake

This Veggie Egg bake is loaded with veggies, cheese and so tasty. It reminds me of back to school lunches and breakfast. I always use @vitalfarms eggs, because of their ethical way to farm and the egg yolks are beautifully orange.

What you need

cup parmesan cheese

pinch ground black pepper

tsp cumin powder

pinch kosher salt

yellow bell pepper

broccoli

pastry crust
Instructions
Oil the 9 inch square pan You can cook the veggies in butter for 2-3 minutes or add the veggies directly to the eggs. In a medium bowl, whisk together eggs. Add sea salt, pepper and cumin and whisk to combine. Add veggie mixture to the beaten eggs and stir to combine. Add cilantro Add cheese. Stir to combine. Pour into prepared baking dish and spread the mixture evenly in the dish. Bake in preheated oven for 25-30 minutes, or until top is set and slightly brown. Cool, slice and serve.
