What you need

garlic

tbsp cilantro

tsp chili powder

tsp sesame seed

tsp salt
lemon
tbsp vegetable oil

cup white rice

tomato

tsp tomato paste

jalapeno

tsp cumin seed
Instructions
Mix well and marinate the fish for 30 min. Slice the eggplant to thin vertical slices. Salt it and add some lemon juice to avoid discoloring. Let it sit for 10-15 min. Take one slice of eggplant, place a fish slice and roll. Sprinkle some pepper and drizzle it with olive oil. Place in an oven proof dish. Bake at 350 for 15 -20 minutes. You can pan fry this as well. Tomato Rice In a pan, add the rice, tomato purée, salt. For a cup of rice, you need 2 cups liquid. Bring it to a boil, simmer and cover. Let cook for 20 minutes. Turn off the heat and let it sit for another 15 minutes. Fluff and serve with the fish wraps. Enjoy!View original recipe
