Baked Tomato Garlic Chicken Thighs with Corn

What you need

avocado oil

dried oregano

ground cumin

onion powder

garlic powder

crushed red pepper

garlic paste

tomato paste

corn

skinless chicken thigh
Instructions
In a bowl add the corn, 1/4 tsp salt and 1/2 tsp oil, mix and set aside. In a oven proof dish, add the tomato paste, roasted tomato paste, garlic paste, chili flakes, garlic powder, onion powder, cumin powder, oregano, oil. Mix well. Add the chicken thighs, massage it well, marinate for 30 minutes to 3-4 hours. Take it out and add the corn in the pan/baking dish, try to bring the chicken on top and nestle it on top of the corn. Bake at 350 for 30 minute, increase the temp to 400 and bake another 20 minutes turning it around to brown the tops. Serve hot with potato’s or bread.View original recipe
